Recipe - Chocolate Sheet Cake

Cake Ingredients
1/2 cup margarine, softened
1 cup sugar
4 eggs
1 cup flour
1 teaspoon baking powder
16 oz. Hershey's chocolate syrup
1 teaspoon vanilla flavoring

Instructions
Cream together margarine and sugar. Add eggs one at a time. Mix in flour, baking powder, syrup, and vanilla. Bake at 350 degrees in a greased 9x13 pan for 30-35 minutes.

Icing Ingredients
1 cup sugar
1/2 cup margarine
1/3 cup canned evaporated milk
1/2 cup chocolate chips
1 teaspoon vanilla flavoring

Instructions
Mix sugar, margarine, and evaporated milk together in saucepan over heat until boiling. Boil for 2 minutes. Remove from heat. Add chocolate chips and vanilla. Mix well with wire whisk and pour on warm cake.

Recipe - Strawberry Cake

Cake Ingredients
1 box Duncan Hines yellow cake mix
¾ cup Wesson oil
4 eggs
1 box of strawberry Jello, dissolved in ½ cup warm water
½ cup strawberries with juice (frozen work well)
4 tablespoons plain flour
Instructions
Mix all ingredients. Pour into a greased and floured sheet cake pan (9 x 13). Bake according
to the time and temperature on the cake mix box. It is done when a toothpick comes out clean. Let cool well before icing.
Icing Ingredients1 stick butter, softened
1 box 10X sugar
½ cup strawberries (frozen work well)

Instructions
Cream butter. Gradually add sugar, mixing constantly. Add the strawberries last and blend. Ice cake.

Recipe - Potato Salad

Ingredients
5 lbs of red potatoes, well scrubbed
¾ cup mayonnaise
1 tsp vinegar
8 stalks of celery, chopped
5 eggs, hard boiled and chopped
1 tsp prepared mustard
½ cup dill salad cubes

Instructions
Cook potatoes in boiling salted water to cover for 15 minutes or until tender. Drain potatoes and let cool to touch. Cut into large cubes, leaving skins on. Mix mayo, mustard, and vinegar. Combine mayo mixture with potatoes, eggs, dill cubes and celery, tossing gently. Check to see if more salt is needed, salt and pepper to taste.

Serves 20.
Notes
You can cut the potatoes in cubes before cooking them, and adjust time to cook to firm tender.

Recipe - Pineapple Casserole

Ingredients
2 cans chunk pineapple, drained
2 cups grated sharp cheddar cheese
1 cup sugar
1 stick butter, melted
8 tablespoons all purpose flour
One sleeve Ritz crackers, crumbled

Instructions
Mix pineapple, cheese, sugar and flour together by hand. Sprinkle Ritz crackers on top. Pour melted butter over all. Bake at 350 degrees for 30 minutes.

Serves 8-10.

Can be made a day ahead.
